Early Perfect Italian is an open-pollinated, sweet Italian roasting pepper renowned for its early maturity and exceptional flavor. Developed by breeder Frank Morton of Wild Garden Seed, this variety produces straight, smooth, 6-9" elongated red fruits with a nicely domed crown and minimal seeds, making it a chef's dream for roasting, peeling, and slicing. The uniform wall thickness and sweet taste enhance its culinary versatility, whether used fresh in salads, grilled, or incorporated into various dishes. As an Open Source Seed Initiative (OSSI) pledged variety, Early Perfect Italian remains in the public domain, ensuring its availability for future generations.
Start seeds indoors 8–10 weeks before the last expected frost. Sow seeds ¼ inch deep in seed-starting mix and maintain a temperature of 70–80°F for optimal germination. Once seedlings have two true leaves, transplant them into larger containers. Harden off plants by gradually exposing them to outdoor conditions over 7–10 days. Transplant outdoors after the danger of frost has passed, spacing plants 18–24 inches apart in rows 24–36 inches apart, in full sun and well-drained soil enriched with organic matter. Maintain consistent moisture and consider mulching to conserve soil moisture and suppress weeds. Fertilize with a balanced fertilizer according to soil test recommendations. Harvest peppers when they are fully red for the best flavor, approximately 80 days after transplanting.
