Produces abundant roots with reddish-purple skin and deep orange flesh that is moist, sweet, and flavorful. Beauregard performs well across a wide range of growing conditions and matures earlier than many sweet potato varieties, making it a favorite for northern gardeners. In addition to the delicious tubers, the tender young leaves and shoots are edible and can be enjoyed fresh or cooked like spinach.
Plant slips ~3 weeks after your last frost in full sun and well-drained soil once temperatures have warmed. Benefits from the extra heat provided by black plastic or landscape fabric. Space slips 12–18 inches apart in rows 3–4 feet apart. Water regularly during establishment, then provide consistent moisture throughout the growing season. Harvest before the first fall frost, generally 90–100 days after planting. Each slip will produce 5+ tubers. Dig carefully, since the tubers are often close to the surface. Cure roots in a warm, humid place for 7–10 days to enhance sweetness and improve storage. Young leaves and vine tips can be harvested sparingly throughout the season for fresh eating or cooking.
