Red Shallots, also known as Dutch Red or Common Shallots, have excellent flavor and superior storage that lasts well into the spring. Plant bulbs/clove sat the same time as garlic in fall to multiply and set seed, or in very early spring to multiply with a lower rate of seed stalks. While not quite matching the delicate nature of true/french gray shallots, these reds match the rich flavor and are much more productive and easier to store.

Plant cloves in late fall before ground freezes or early spring as soon as soil is workable. Place cloves 1-2" below the soil 6" apart in rows 8" apart and cover gently with soil. For best weed control use a natural mulch like straw and mulch heavily making sure mulch has enough 'give' to allow emerging stems to burst through.Cure bulbs in a warm dry space for 2-3 weeks before putting into storage. Try finely dicing a shallot into any type of vinaigrette to take your salad and grilling game to the next level.
