The 'Dottenfelder' cabbage, a creation of Dieter Bauer from Germany's renowned Kultursaat breeders network, is an excellent choice for Midwest gardeners. This variety is characterized by its medium to large, firm, green heads that are slightly oval, making it a sturdy and reliable option for the region. With a short inner stem core and dense, cream-colored insides, 'Dottenfelder' is perfect for winter slaws and kraut, maintaining its quality through long storage periods. This green cabbage, with its unique flat to round shape and sweet flavor, is adaptable to a variety of culinary uses.
Direct seed. Place 2-3 seeds in shallow holes 2 feet apart. When seedling emerge thin to the strongest plant. Cover with floating row cover to protect from pests for first several weeks. Dottenfelder is a long-season, storage cabbage so aim to sow in early summer and allow it to grow into the fall. Cabbage head should be firm and full before you harvest.
