Bhut Jolokia, commonly known as Ghost Pepper, is a legendary superhot chili from Assam, India, famous for once holding the Guinness World Record for hottest pepper (over 1,000,000 Scoville heat units). Ghost Pepper produces wrinkled, narrow, tapering pods—typically 2–3 inches long—that mature from green through orange to vibrant red. Though extremely slow to develop, its unmistakable heat and smoky, fruity flavor make it a prized variety among heat lovers and hot-sauce makers. Plants reach 2–4 ft tall (or more in warm climates) and require patience, warmth, and consistent care to bring their bold pods to harvest.

Start Bhut Jolokia seeds indoors 8–10 weeks before your last frost, maintaining soil temps of 80–90 °F for optimal germination. Transplant only after nighttime lows stay above 60 °F. Grow in full sun, in rich, well-drained soil, spacing plants 18–24 inches apart. Provide steady moisture and balanced fertilization, but avoid waterlogging. Because ghost peppers are slow to mature, expect 100 days (or more) from transplant to full pod ripeness. Pollination may lag—hand pollinate with a soft brush if needed. Harvest when pods achieve full red (or your cultivar’s mature color), cutting rather than snapping to protect stems, and allow a few extra days on plant for full internal development. Be careful not to over-fertilize, or plants will grow excessive
