Georgia Flame Hot Pepper is an open-pollinated variety believed to originate from the Republic of Georgia, where long, flavorful red chiles are prized for roasting, drying, and making traditional pepper pastes. The plants are vigorous and productive, yielding 6–8″ thick-walled fruits that ripen from green to a glossy crimson red, although fruit get smaller over the course of the season. Heat levels are medium, with a balanced, slightly sweet flavor that stands up beautifully to grilling or sauce-making. Adaptable and reliable, Georgia Flame thrives in full sun and warm soil, producing abundantly through the heat of summer.
Start Georgia Flame seeds indoors 6–8 weeks before your last frost. Keep soil at 75–85 °F for even germination. Transplant into full sun once night temperatures stay above 55 °F. Space plants 18–24″ apart in rich, well-drained soil and water consistently. Harvest green for milder flavor or allow to ripen fully red for sweetness and depth. Mulch to retain moisture and extend fruiting.
